Pud Thai

(This isn't a picture of mine, we ate it all, but it gives you an idea of how it should look if you aren't familiar with the dish, although mine wasn't as dark colored)

4 Servings



8oz dried rice noodles/sticks (the ones I found were called sticks)
3 T oil
1 clove garlic, minced
1 egg
1/4 lb shrimps, shelled and devained
1/4 C water (use only if noodles are dry while cooking)



1/4 C fish sauce
1/4 C sugar
1 T paprika



1 green onion cut into 1 inch pieces
1/4 C ground peanuts
1 C bean sprouts

1. Soak rice noodles in cold water for 2-3 hours or until soft.
2. Heat frying pan; add oil, garlic, egg, and shrimp. Scramble egg until done. Reduce heat if necessary.
3. Drain noodles and add to mixture. Stir fry until translucent, adding a small amount of water if needed.
4. When noodles are soft, add fish sauce, sugar and paprika.
5. Mix in peanuts, bean sprouts and onion.
